For the month of July, the Chef’s Sandwich on the Etch Kitchen & Bar menu will be a turkey club. But this is not just any turkey club, this is a sandwich that has gone through a competition and voting process. Executive Chef Michael O’Dowd invited all the chefs of Etch and Cress on Oak Creek to participate in the Turkey Club competition. The participants included Josh Jonas, Banquet Chef, Jimmy Day, Chef de Cusine, Joseph Wickham, Sous Chef, and Raymond Newhall Etch/Cress cook.
And the winner is…..Joseph Wickham with a Turkey Club that is sure to inspire you!
The winning Turkey Club features:
- Apple and Orange Juice Brined Turkey Breast
- House-Made Naan Bread
- Jalapeno Bacon
- Whole Grain Honey Horseradish Mustard
- Lemon Emulsion
- Heirloom Tomatoes
- Butter Lettuce
- Gruyere Cheese
A note from Chef Joe on what inspired him to create this Turkey Club:
This sandwich is inspired by lunches at Denny’s with my mother in Winslow. We didn’t have much money, but she would sometimes treat me to lunch at Denny’s. I thought it was high society. She would order me a turkey club and a strawberry milkshake with extra strawberries. If there was any doubt that there weren’t extra strawberries in my milkshake, she would send it back 5 times over. These little luncheons where very, very special to me. The right company can make any restaurant the French Laundry. My mother also had a lot to do with me wanting to cook. She always put love into her food and you could taste the sincerity of everything she cooked. This sandwich was created with that simple idea, of loving the food and the honest intention is what makes it a winner. It’s a product of heart, not head cooking.
